  • Milk (1 glass for about 15-20 pieces);
  • The same amount of sugar;
  • 2 eggs;
  • 2 cups of flour;
  • Slaked soda or baking powder;
  • Vanillin;

A simple recipe for cupcakes in a silicone mold

I took 1.5 cups of milk, almost three cups of flour and a little less than one and a half cups of sugar and I got 20 muffins. To ensure that the dough always turns out airy and light, there is one rule that I mentioned above: “Mix dry with dry, and liquid with liquid.”

Ingredients:

  • 2 eggs,
  • 200 grams of butter, sour cream, powdered sugar, flour,
  • 1.5 tsp. baking powder,
  • 1 tsp vanilla sugar.

Preparation:

  1. Combine soft butter with powdered sugar and beat with a mixer.
  2. Add sour cream and beat again.
  3. Add eggs. Beat.
  4. Sift the flour, add baking powder and vanilla. Pour the liquid mixture into the dry ingredients and mix gently.
  5. You should get a thick dough. If you take it with a spoon and turn it over, the dough should not fall.
  6. Line muffin tins (or metal ones for shortbread baskets) with special paper muffin tins. Fill the containers approximately 2/3 full with dough.
  7. Place the cupcakes in a cold oven. Set the temperature to 170 degrees. Bake for about 25 minutes. You can check readiness with toothpicks. The surface of the cupcakes should not brown too much.
  8. Cool the cupcakes, remove from the molds and decorate with cream.

If you want chocolate cupcakes, add a tablespoon of cocoa to the flour. You can also put fresh or frozen fruits, berries, chocolate pieces, citrus zest, and nuts into the dough.

Any thick cream is suitable for cupcakes: butter, sour cream, custard, etc. My favorite way to decorate cupcakes is with whipped cream. If you baked chocolate cupcakes, the cream can be given the appropriate flavor using cocoa or chopped chocolate.

Children really like colorful cupcakes. That's why I often tint the cream. You can use food coloring for this purpose. But I’m not a fan of treating children to such synthetic additives, so I use only natural dyes: spices, fruit or vegetable juices.

Cupcakes are decorated with cream using a pastry syringe, bag or cornet. When I'm short on time, I just spoon it out and flatten it with a fork in a circular motion.

On top of the cream, the cupcakes can be decorated with grated waffles, coconut flakes, marmalade, candied fruits, berries and fruits, chocolate, and confectionery toppings. Don’t forget to dip fresh berries and fruits in gelatin first to prevent them from getting dry.

The simplest muffins recipe is suitable both for cooking in portioned molds and for one small baking dish. If you proportionally increase the products by 2-2.5-3 times, you will get one large cupcake. We will bake the cupcakes in the oven, but if you wish, you can also cook them in a slow cooker.

All ingredients for making vanilla cupcakes should be at room temperature. So, let's take wheat flour (I use premium grade, but first grade will do), sugar, butter, medium-sized chicken eggs, baking powder and a pinch of vanillin for flavor.


Since the dough is made literally in 5-7 minutes, immediately turn on the oven to warm up at 180 degrees. Break fresh chicken eggs into a bowl, add 50 grams of sugar and a pinch of vanillin (if you want).


Beat everything with a mixer or whisk for a couple of minutes until the mass becomes homogeneous and fluffy. You can even beat everything with a fork - it doesn’t matter. Then add butter, which you either melt and cool beforehand, or just use very soft butter (take it out of the refrigerator a couple of hours before). Combine butter with egg mixture.



Mix everything to form a homogeneous, thin dough. The consistency will be like sour cream with 20% fat content. There is no need to stir the dough for a long time - just combine everything. If you try hard to make the dough smooth, the finished muffins will not be loose and fluffy, but will be dense and stuffed.


Divide the dough into portioned molds approximately halfway full. I have silicone ones, but I still lightly greased them with vegetable oil. Place the cupcakes in a hot oven and bake for 20-25 minutes at 180 degrees.
