1. Lightly fry the sausage in a small frying pan, about 2-3 minutes on each side. Using a slotted spoon, place sausage on a plate to drain excess fat.

2. In the same pan, fry the onions and carrots for 3 minutes. Then add the chopped tomato, season with salt and pepper and simmer for 2-3 minutes.

3. Take a pan of water, add lentils and bring to a boil. Then reduce the heat to medium, add the vegetable mixture from the pan, cover and cook until the lentils are cooked.

Remember! Each type of lentil takes a different time to cook, red can be cooked in 15-20 minutes, and green - up to 45 minutes.

4. Add sausage and diced potatoes to the soup and cook for 15-20 minutes until the potatoes are completely cooked.

Red Lentil Soup

For the soup you will need:

  • 1-1.5 cup red lentils;
  • a bunch of green onions;
  • a little curry;
  • 1 cm fresh grated ginger;
  • 3-4 tbsp. tomato paste;
  • salt to your taste.

  2. Peel all vegetables and cut into equal-sized cubes.
  3. Heat vegetable oil in a frying pan and add onions, carrots and celery root one by one. Fry until golden brown. Salt and add pepper.
  4. Then add pepper to the pan. Fry the peppers with vegetables for 2 minutes.
  5. Peel the tomatoes and cut into cubes. Add the tomato to the pan and simmer for 7-8 minutes.
  6. Remove the meat from the broth, tear it into fibers or cut it into cubes and put it back into the pan.
  7. Place lentils in boiling broth and simmer for 10-15 minutes.
  8. Add vegetables to the soup and cook everything together for another 5 minutes.
  9. A few minutes before readiness, add finely chopped greens.

  • red lentils – 1 cup;

Place ghee in a frying pan and fry finely chopped onion and garlic on it, adding spices at the end. After this, both masses are mixed, brought to a boil and removed from heat. Cooking procedure
  1. Soak the lentils in water for about an hour.

  2. Peel the vegetables and garlic.
  3. Cut the potatoes into medium cubes. This soup can be prepared without potatoes, as it is already quite filling.

  4. Chop the onion into pieces, and grate the carrots with a coarse grater or cut into thin strips.

  5. Fry onions and carrots in a heated frying pan with vegetable oil. You can do this right in the pan.

  6. While the vegetables are roasting, let's get to the sausages. These can be any thin sausages, for example hunting sausages. Of course, it will be tastier with Italian ones, but they can’t always be found everywhere. Sometimes I cook this soup with regular smoked sausages.

  7. Cut the sausages into rings and add to the vegetables. Stir and fry for another 5-7 minutes. Finally add finely chopped garlic. You can also simply put it through a garlic press.

  8. If you prepared the frying immediately in a pan, then put potatoes and lentils in it. Add salt and oregano.
  9. Fill with broth or water in which we dilute the bouillon cube.
