Today I will please you recipe for yeast pie with apples. We will bake it in the oven. It turns out to be incredibly tasty, aromatic and beautiful, looks original, and is truly a culinary masterpiece. Decorating a pie with such a lattice is not at all difficult. Products for it are affordable and easy to prepare.

Ingredients:

  • flour - 550-600 g
  • butter or margarine - 125 g
  • dry instant yeast - 2.5 teaspoons
  • milk or kefir - 250 ml
  • sugar - 1/2 cup (half cup)

  • apples - 4-5 pcs
  • sugar - 4-5 tbsp. spoons

I kneaded the dough for the apple pie in a bread maker. For those who don’t have a bread machine, knead the dough by hand.

Dissolve yeast in warm milk or kefir. Grind the egg with sugar. Combine everything, add softened butter, vanillin and salt. Gradually add flour, knead soft elastic dough. Cover the dough with a towel and place in a warm place for 40-50 minutes.

Place the risen dough on a table sprinkled with flour and divide it into 2 unequal parts. Roll out most of it and place on a greased baking sheet.

Peel and cut the apples into thin slices, place on top of the dough and sprinkle with sugar. Roll out the remaining dough, cut into strips and place on top of the pie in the form of a lattice. Brush the top of the pie with beaten egg.

Bake the yeast pie with apples in an oven preheated to 180 degrees for 30-40 minutes, depending on the oven.

The base of an apple pie is always the dough. As a rule, it does not require the use of special products. Therefore, you can prepare apple pie not only for the holiday table, but also for everyday tea drinking from products that you find in your refrigerator.

Simple apple pie

We suggest preparing a simple apple pie based on aromatic dough and, most importantly, with a very tasty filling. To prepare it, we will need:

  • one and a half cups of flour;
  • 150 g margarine;
  • half a glass of sour cream;
  • 1/3 cup Sahara;
  • a teaspoon of vanilla sugar, cinnamon (ground) and baking powder;
  • two apples.

So let's get started. Let's start, of course, by preparing the dough. Add sour cream, sugar with vanilla sugar, as well as flour and baking powder to the softened (slightly melted) margarine. Mix everything well to form a homogeneous sticky dough.

Now let's make the filling, take the apples, cut them into slices, which we then sprinkle with cinnamon.

The dough and filling are ready. The final step is to place all the ingredients in the mold. We can use either metal, glass or silicone. We lubricate it. We put the dough into it, and stick the apple slices evenly in a circle, while deepening them a little.

Bake this open apple pie in an oven preheated to 180 degrees for approximately 30-40 minutes. The result is a delicious, aromatic dessert.

This cake will have an amazing taste thanks to the thick caramel, which is obtained from a mixture of sugar, apple juice and cinnamon and perfectly saturates the base.

To prepare a yeast pie with apples, we will need:

  • butter dough (we’ll look at how to prepare it below);
  • apples;
  • cinnamon;
  • sugar;
  • vegetable oil.

Of course, you can use any yeast dough, but the best option for a sweet pie would be butter dough.

Preparing an open pie is very easy. Roll out the prepared dough, taking into account the shape of the baking sheet. Grease the baking tray well with vegetable oil and lay out the dough.

Everyone knows that sweet pastries are much tastier if they are baked using butter dough. Apple pie is no exception. Let's take a look at the recipe for making this dough.

We will use the following products:

  • water (milk or curdled milk) - one glass;
  • pressed yeast - 25-30 g;
  • salt - ½-1 tsp;
  • sugar - ¼ cup;
  • eggs - 2 pcs.;
  • butter (vegetable) oil - 60-80 g;
  • flour - about 600 g.

First, we put the dough by analogy with ordinary yeast dough. But you need to melt the butter in advance. When the dough is ready, the oil temperature should be 30-40 degrees.

We add baked goods into the prepared dough, namely eggs with butter. And add the remaining ingredients: salt, sugar, part of the flour. It is important that the consistency of the dough is correct. It is usually recommended to make one that will not stick to your hands. However, it is already considered too steep and heavy. That is why you should achieve a consistency where the dough still sticks and feels “light” to the touch. Not everyone can succeed the first time. But there is no need to despair. Experiment, and most importantly, try to remember how much flour you put in; perhaps next time you will need to increase or decrease the amount.

After kneading the dough, you need to put it in a warm place to rise, while covering it with a towel. When the dough has risen 2-3 times, knock it down and leave it to rise again. This procedure should be repeated 2-3 times.

Savory apple pie

Let's prepare an apple pie in a slow cooker. The recipe we offer for consideration is prepared with crispy dough and an airy filling. This is what gives the pie its special piquancy.

Well, let's take a look at the ingredients we need. We will prepare the dough from:

  • rye flour - about 180 g;
  • olive oil (flavorless) - 50 g (5 tbsp.);
  • cold water - 3-5 tbsp. l.;
  • eggs - 55 g or 1 pc.;
  • poppy seed - 18 g (2 tbsp);
  • salt - pinches;
  • butter - 3-5 g.

For the filling you will need 200 g of apples (one large or 2 medium ones), and the filling is prepared from:

  • eggs - 110 g or 2 pcs.;
  • natural yogurt (fat content 2.5-4%) - 200 ml;
  • brown sugar (honey) and cinnamon - ½ tsp each.

So, we have collected the ingredients, now we are preparing an apple pie in a slow cooker.

Beat the egg with a whisk. Mix flour with poppy seeds, salt, egg and butter. Mix the dough. Gradually add cold water, one tablespoon at a time, until the dough forms a ball. Wrap the dough in cling film and place it in the refrigerator for at least 30 minutes.

Grease the multicooker bowl with butter.

Cut two strips of parchment paper about 12 cm wide and about 15 cm long. Place them crosswise in the multicooker bowl. They are necessary for conveniently pulling out the cake, so as not to turn it upside down.

Roll out the dough into a disk with a diameter approximately equal to the diameter of the bottom of the bowl. We carefully lay it down and distribute it along the bottom, forming sides along the walls about 2.5 cm high.

If desired, peel the apples, cut them in half, remove the core and cut into slices.

To prepare the filling, beat the eggs with a whisk, mix them with yogurt, sugar (honey) and cinnamon.

Place the apple slices on the dough and pour the egg and yogurt mixture over it. We set the “Baking” program. Turn on the multicooker for 1 hour and 5 minutes.

When the apple pie in the slow cooker is ready, remove the bowl. Let the pie cool, then carefully remove it and place it on a prepared dish.

Apple pie made from puff pastry

Another delicious apple pie option is apple layer pie. It is very easy to prepare, and most importantly, incredibly fast.

We will need:

  • one egg;
  • jam;
  • 500 g puff pastry;
  • sugar;
  • 3 apples;
  • lemon juice.

Prepare layer pie with apples in two simple steps. To begin, lay out the frozen puff pastry on paper, let it thaw, cut off small ribbons along its entire perimeter, which we cut on both sides with a knife. Brush the edges of the dough with beaten egg. We put ribbons on these edges. Lubricate the middle of the dough with jam, then lay out the peeled and sliced ​​apples.

In the second step, sprinkle the apples with lemon juice, sprinkle them with sugar, and brush the ribbons with egg. The remaining ribbons can be placed on top of the pie, but then they also need to be brushed with egg. Place the pie in the oven (temperature 180 degrees) for about 25-30 minutes. When the pie is ready, let it cool and invite the guests for tea.

Another version of apple pie

Consider another recipe for an open apple pie. The special thing about this pie is that it can be made without sugar!

We will prepare the following products:

  • butter - 100 g + for greasing the baking sheet;
  • sugar - half a glass + for sprinkling apples;
  • salt - one pinch;
  • flour - 3 cups. with top;
  • milk - 1 cup;
  • baking soda;
  • apples - 10-11 pcs.;
  • powdered sugar.

Take the butter and grind it with sugar, add the eggs one by one, add salt, flour mixed with soda, and pour in the milk. Knead the dough well. Roll it out into a layer and place it on a baking sheet. Pre-oiled. Cover the dough with an even layer of peeled thin apple slices. Sprinkle them with sugar. Bake the pie for an hour in the oven (moderately hot).

Sprinkle the finished cake with powdered sugar.

For filling:

  • Apples - 4-5 pcs. (I have small ones);
  • Sugar - 2 tbsp. spoons;
  • Lemon juice - 2 tbsp. spoons;
  • Cinnamon, cardamom and other baking spices - to taste.

For the test:

  • Milk - 250 ml;
  • Sugar - 3 tbsp. spoons;
  • Yeast - 25 pressed (wet) or 7 g dry;
  • Salt - 0.5 teaspoon;
  • Eggs - 1 pc.;
  • Flour - 3.5 cups (about 450-470 g);
  • Vegetable oil - 100 g.

How to cook apple pies in the oven

We will prepare the dough using the sponge method. Today we will use live yeast, but pies made with dry yeast turn out just as good.

Instead of 25 g of fresh yeast, you can use 7 g (1 small teaspoon) of dry yeast.

Mash the yeast into pieces using a fork or spatula. Add 1 tbsp. spoon of sugar.


Add warm milk. The temperature of the milk should not be higher than 40 C, otherwise the yeast may die.

To make the dough stronger, add 3 heaped tablespoons and stir well.

Don’t worry if not all the lumps are mixed in the dough - this is normal for dough, we don’t need smoothness at this stage.

Cover the dough with cling film or a towel and place it in a place without drafts for 10-15 minutes (for example, in a switched off oven).

While the dough is rising, prepare the flour (0.5 cups went into the dough, the remaining 3 cups will be needed when kneading the dough). The flour needs to be sifted well through a fine sieve, saturate it with air, thanks to this the dough for pies will be fluffier and airier.

We prepared the flour and set it aside.

Break the egg and mix with salt. Then add the remaining sugar (2 tablespoons).

Add vegetable oil (almost half a faceted glass).

Pour the suitable dough into the dough. Mix.

We start adding flour. You can add it through a sieve, while simultaneously sifting it again.

We begin to knead the dough using a spatula or spoon. Add flour gradually, in parts.

At some point you will feel that the dough is already too thick to knead with a spatula (spoon).

Set the spatula aside. Place the dough on a floured surface and begin kneading the dough with your hands. Yeast dough loves your hands very much, the more effort you put into kneading, the better your baking will turn out.

When the dough begins to easily come off your hands, roll it into a ball and return it to the bowl.

Pour a little vegetable oil into your palm and grease the surface of the dough ball. Cover the bowl with a towel or cling film.

The dough should rise and rise properly at room temperature without drafts (it usually takes me 1.5-2 hours.

Apple filling

While the dough is rising, prepare the apple filling.
If desired and to taste, you can add orange or lemon zest, cinnamon, and cookie crumbs to the apple filling, but in any case, prepare the apples correctly in advance. By removing excess juice, you will not worry about leaking pies in the oven.

Peel the apples.

Cut into small cubes (we cut vegetables for Olivier salad of similar sizes).

Sprinkle with lemon juice and sprinkle the filling with sugar. Lemon juice is needed so that ripe fruits release excess moisture as quickly as possible. Granulated sugar also contributes to this.

Before adding the filling to the pies, squeeze it out so that the juice from the apples does not leak out in the oven during baking.

If the apples are very juicy and you are worried that the apple pies will start to leak in the oven, prepare the filling in a different way. Cut the fruit into medium-sized cubes, place in a frying pan with a small piece of butter and sprinkle with sugar. Simmer the apples over low heat for 3-4 minutes. After complete cooling, drain off excess liquid (you can drain the filling in a colander).

Forming pies

The risen dough should be divided into pieces, which we will place on a surface sprinkled with flour. The pieces are the size of a large chicken egg. Each piece of dough is a future pie. Particularly demanding housewives distribute the dough into pieces according to weight so that the baked goods look perfect, all the pies are the same.

Roll out each piece of dough using a rolling pin (or press with your hands).

Place the filling on each flatbread (1 heaped teaspoon). To taste, you can sprinkle the filling a little with sugar (but I usually don’t do this, the apple filling turns out sweet anyway).

We pinch the pie so that there are no holes left. Place on a baking sheet covered with parchment paper.

Now you need to grease the apple pies so that they get a golden brown crust in the oven.

The secret to a crispy golden brown crust is simple - mix the yolk of one egg with a pinch of salt and add 1-2 tbsp. spoons of milk.

I noticed that if you grease the baked goods not just with yolk, but with yolk with water or milk, the surface turns out beautiful, glossy and not as dark as when greased only with yolk.
Using a pastry brush, grease all the pies on the baking sheet.
You can sprinkle the top of your baked goods with sugar or baking spices.
I bought specially selected spices from a grinder and often use them for sprinkling. The aroma in the apartment is indescribable! Still, freshly ground spices give off a much better aroma than those from a bag.


Place the pies at a short distance from each other so that they do not stick together in the oven (yeast dough increases significantly in size).


By this time you need to turn on the oven to heat up (temperature 180 C).
After 15 minutes, our pies will “grow” a little and increase in size. Now it's time to go into the oven!
5 minutes after the pies have been in the oven, you need to reduce the baking temperature to 160 C and bake for another 25-30 minutes.
After half an hour, the apple pies are ready in the oven. Take out the baking sheet with the pies and place them on a plate or in a bowl. With hot tea, milk or kefir - it will be delicious with any drink.

Then add flour in parts and knead the dough for 10-15 minutes. You may need a little less or more flour depending on its quality and kefir. As soon as the dough just slightly sticks to your hands, stop adding flour. The dough should not be too clogged or tight.


Leave the dough to rise in a warm place for an hour, no more. Be sure to cover the bowl with a towel. In order for the yeast to work actively, the container with the dough can be placed in a steam bath (on a bowl of warm water). The dough works well in a multicooker with the “Yoghurt/dough” mode on. This program maintains the optimal temperature for rising yeast dough (+36-40 degrees).

Among all the variations, my favorite is the filling, which is always made from fresh apples. Then the baked goods are the most fragrant.

Wash the apples, peel and core them, finely cut into cubes.

It is better to choose apples of the sour or sweet and sour variety, then the filling will be tastier, with a slight sour tint.




Pour apples into a saucepan or saucepan, add 2 tbsp. l. sugar and butter.


Simmer the apple cubes for 10 minutes over low heat, stirring occasionally. Cool the finished filling.


The dough will double in size. There is no need to knead the dough while it rises.


Remove the dough from the bowl and knead it. On a board sprinkled with flour, cut into 20 pieces. From each part, roll out a round thin cake with a rolling pin and place 1 tbsp in the middle. l. apple filling.

To get a pie with a new taste, housewives like to improvise with fillings. It turns out great if you sprinkle the apples not only with sugar, but also with cinnamon, which gives the dessert a unique aroma. The calorie content of a baked apple pie is lower than that of a fried pie and is approximately 190 Kcal/100g. To reduce calorie content, it is necessary to reduce to a minimum the fat and sugar content in the dough, as well as the amount of sugar in the filling.

  • ground cinnamon – 1/6 tsp.

for lubrication and dusting:

  • yolk – 1 piece
  • milk – 1 tbsp. l.
  • ground walnuts - 2 tbsp. l.

Preparation:

  1. Place the dough. To do this, pour warm milk into a container of a suitable size, add dry active yeast, granulated sugar, flour and stir well. Cover the container and leave in a warm place for 45 minutes. During this time, the contents of the container will increase and a characteristic yeast “cap” will form on its surface, indicating that the yeast is suitable for kneading dough. If you have regular yeast, you can use it after familiarizing yourself with the substitution proportions.
  2. Place the butter, cut into small pieces, in a small saucepan, melt over low heat, cool until warm.

    Melt the butter over low heat only. This minimizes the chance of oil burning.

  3. Break an egg into a cup, add melted butter, vanilla sugar, salt, risen dough and whisk well until smooth.
  4. Sift flour into the resulting mass and stir with a wooden spoon. If stirring becomes difficult, place the flour mixture on a cutting board and knead with your hands into an elastic, soft dough that does not stick to your hands.
  5. Shape the resulting dough into a ball and place it in a clean cup with a volume 2-2.5 times the volume of the dough. Cover the cup with the dough with a wet towel and leave to rise in a warm place for 2 hours. During this time, it is advisable to knead the dough 1-2 times.
  6. Place the well-risen dough on a cutting board sprinkled with flour and knead. Divide the dough into 2 equal parts - one part for one small pie.
  7. Wash the apples, dry them, cut out the seed pod and cut into small slices. One apple yields about 9-10 slices.
  8. In a small cup, mix 2 types of sugar: brown cane sugar and granulated sugar, add ground cinnamon and mix.
  9. Mix egg yolk with milk.

  10. Roll out the dough into a layer about 7 millimeters thick. Using a glass, cut out circles with a diameter of about 6-7 centimeters.

  11. Carefully roll the sliced ​​apples in the sugar mixture.
  12. Place an apple slice rolled in the sugar mixture onto each cut out circle of dough.

  13. Pinch each circle of dough with an apple slice well.

  14. Place the pinched circles of dough with an apple slice inside in a circle in a baking pan lined with parchment. Place the remaining dough in the middle, giving it the shape of a ball.
